Ubisoft’s rules allow monetization of videos on YouTube and similar services. The rest of the rules are explicitly detailed and should be easy enough to follow: Do not take assets from our games (e.g. voice, music, items) and distribute them separately. Unless approved by us, the use of our content in videos must be non-commercial.

The music they have in-game are licensed to be used in-game and aren't necessarily transfered to the youtuber, you're just a single person and unless you have the rights, permission, or have it licensed out then you'll be flagged or the video will be demonetized..plus Bethesda states NOT to monetize straight up gameplay videos and you can look that up yourself. Bethesda uses older music since it's both cheaper to license out and it fits the fallout theme.

Blizzard Entertainment has their own rules regarding YouTube monetization. There is no information available for Activision. Activision Blizzard does not have an official statement.
